Banana Chocolate Chip Chia Pudding

This is one of those recipes that tastes so much better than it looks, so it’s perfect if you have folks in your home that get to your treats before you do!  This was inspired by a dessert at Swallow in the Hollow, an awesome Southern-style venue in Roswell, GA.  Of course, I made it healthy:)

Banana Chocolate Chip Chia Pudding

 

¼ cup chia seeds*

1 cup unsweetened vanilla almond milk

½ tsp vanilla

1 small ripe banana, mashed

2 tsp sweetener of choice

¼ cup semi sweet mini chocolate chips

Thoroughly mix all ingredients.  Chill overnight or for at least several hours.  I usually stir occasionally until it begins to gel to keep the chocolate chips from settling too much to the bottom of the container.

*Chia seeds are becoming more available in general grocery stores (sometimes sold as salvia hispanica).  They are high in protein, fiber, and Omega 6 fatty acids.  When chia is blended with liquid, it forms a gel that can be used as an egg replacer or pudding base.
